Sartori Opens in Puerto Banús with Fresh Pasta, Pizza and a Broader Italian Menu

Deluca begins a new chapter under the name Sartori. The restaurant at El Corte Inglés Marbella’s Gourmet Experience retains its handmade daily pasta while adding pizzas, focaccias, antipasti, meat and fish dishes.

Deluca Becomes Sartori

Puerto Banús has a new name on its Italian dining scene. Sartori replaces Deluca at the Gourmet Experience inside El Corte Inglés Marbella.

The change does not mean abandoning the restaurant’s specialisation in fresh pasta. Pasta will continue to be made by hand every day, but it will now share the menu with pizzas, focaccias, Italian starters and substantial meat and fish dishes.

The restaurant has therefore evolved into a contemporary trattoria designed for both shared meals and traditional multi-course dining. malagahoy.es

Handmade Pasta Remains at the Heart of the Menu

Sartori continues to prepare different pasta shapes and fillings in its own kitchen each day.

The menu includes ricotta and spinach ravioli served with San Marzano tomato, Parmesan and basil.

Roasted pumpkin triangoli combine mascarpone and Parmesan with sage butter, while lamb cappelletti are filled with almonds and plums and served with herb butter and meat juices.

Pistachio Pesto, Ragù and Red Prawns

The restaurant also offers several unfilled pasta dishes.

Rigatoni is served with green pistachio pesto and burrata, while pappardelle comes with traditional ragù and Parmesan.

The seafood selection includes tagliolini with red prawns, tomato, roasted garlic, basil and chilli.

A traditional lasagne prepared with pasta sheets, ragù and béchamel completes this part of the menu.

Antipasti for Sharing

Sartori’s transformation is particularly visible in its expanded selection of starters.

Italian classics include vitello tonnato, parmigiana di melanzane and panzanella.

Burrata is served with aubergine caponata, red pesto and rocket. Other options include beef tenderloin carpaccio and focaccia topped with cured beef from León, mozzarella and truffle.

Pizza Joins the Menu

Pizza is another important addition to the restaurant.

Alongside a classic Margherita, customers can choose combinations featuring mortadella and pistachio pesto, spicy spianata calabrese or cooked prosciutto.

One of the most distinctive options combines gorgonzola, mascarpone and pear, balancing blue cheese with softer and sweeter flavours.

New Meat and Fish Dishes

Sartori has introduced several main courses for customers looking beyond pasta and pizza.

Lemon-roasted coquelet chicken is served with baby potatoes and bimi, while cod alla puttanesca comes with polenta.

The veal Milanese is accompanied by tagliolini in lemon butter. A “false risotto” uses orzo pasta instead of rice and combines it with green asparagus and red prawns.

A Contemporary Trattoria in Puerto Banús

The new concept is presented under the slogan “La vita, a tavola”, reflecting the idea of the dining table as a place for sharing and enjoying food together.

Sartori remains on the second floor of El Corte Inglés Marbella, inside the Gourmet Experience area on Calle Ramón Areces in Puerto Banús.
