Kaito opens in Marbella: Tokyo’s ‘hand roll bar’ trend arrives on the Costa del Sol


The new Japanese restaurant on Avenida Fontanilla puts a large counter at the heart of the experience, with freshly prepared hand rolls and direct interaction between chefs and diners.

Marbella has a new addition to its increasingly diverse dining scene. Kaito Hand Roll Bar has opened at Avenida Fontanilla, 6, bringing a concept inspired by traditional Japanese counter-style restaurants to the Costa del Sol.

This is not simply a place to order sushi and wait for it to arrive at the table. At Kaito, everything happens around a large central counter, where diners can watch the chefs prepare the fish, shape the rice and assemble each hand roll moments before it is served.

It is a fast, informal and highly visual way of eating that has become increasingly popular outside Japan and is now making its way to Marbella.

What exactly is a hand roll?

Unlike traditional maki, which is sliced into individual pieces, a hand roll, or temaki, is usually served as a cone or open roll of nori seaweed filled with rice and other ingredients.

Fish and seafood often take centre stage, but one of the most important elements is timing. A hand roll is designed to be eaten almost immediately after preparation so that the seaweed remains crisp while the rice and filling keep their ideal texture.

That sense of immediacy is central to Kaito’s concept. Each piece is prepared in front of the diner and served straight away, putting freshness and precision at the heart of the experience.

A counter where the kitchen becomes part of the experience

The new Marbella restaurant draws inspiration from a style of dining found in Tokyo, where the distance between chef and guest is deliberately reduced.

The counter becomes the real centre of the restaurant. From their seat, diners can follow the preparation process from start to finish: slicing the fish, preparing the rice, assembling each hand roll and serving it immediately.

The concept aims to respect Japanese technique while presenting it in a more relaxed and contemporary format.

The result is very different from a conventional Japanese restaurant: less formality, more interaction and a sequence of freshly prepared pieces served directly from the counter.

Tuna, salmon, toro and wagyu take centre stage

Although hand rolls are the main attraction, Kaito’s menu extends beyond a single format.

The restaurant works with ingredients such as tuna, salmon, toro and wagyu, alongside a selection of fish and seafood used across different preparations.

The wider offering also includes Japanese-style dishes such as sashimi, nigiri and tartare, always keeping the quality of the product at the centre of the menu.

The format also makes it easy to try several different combinations during one meal, turning the experience into a tasting journey through contrasting flavours and textures.

From Madrid to Marbella

The opening on the Costa del Sol marks another step in the expansion of Kaito, which already has venues in Madrid.

Behind the concept is Grupo China Crown, a hospitality group specialising in Asian cuisine and responsible for several restaurant brands in Spain.

Marbella is now the latest destination chosen for the hand roll bar format, adding a type of Japanese dining experience that is still relatively unusual in the city.

A more spontaneous way to eat Japanese food

Another feature of the hand roll bar concept is its informal character.

Rather than centring the experience around a traditional table service, the counter encourages diners to sit close to the chefs and watch each piece being made in real time.

That approach fits particularly well with Marbella’s evolving restaurant scene, where new openings increasingly combine food with a more social, interactive and experience-led format.

With Kaito, the city now has a venue where sushi is enjoyed straight from the counter, almost directly from the chef’s hands.
